Collard Green Wrap Recipe | Meal Ideas & Healthy Food



Here's a quick recipe I posted in our Weight Loss Support Online group last week. I am posting it in case you missed it and want to Bookmark or Favorite this page to save the idea. Before we get into the details, I want to share some of the health benefits of collard greens, as well as why you should consider using the leaves for wraps in addition to whichever other types of greens you like to use (lettuce wraps, kale wraps, cabbage wraps, etc).

Health Benefits of Collard Greens & How To Eat

Collard Greens are good sources of vitamin C, vitamin K and soluble fiber. They contain nutrients with potent anticancer properties, such as diindolylmethane and sulforaphane. Collard greens are low in calories; they have about 46 calories per 1/2 pound cooked collards and about 11 to 30 calories per raw leaf. Researchers at the University of California at Berkeley confirm that vegetables like collard greens help regulate immune system with potent antiviral, antibacterial and anticancer activity.

NOTE: Eat in moderation if you take blood thinner medicine. *

They are also an awesome source of Vitamin A and are very filling / satisfying food.

Different ways to eat collard greens ...

It used to be that we thought it was best to eat collard greens boiled for a couple of hours with smoked meat bone (ham hocks, smoked turkey, etc) with onions, garlic, a little vinegar (to soften) and spices. They are absolutely delicious this way and especially when mixed with other greens like kale, mustard greens dandelion greens and / or even swiss chard or beet greens. We now know that it is just as delicious and can be even healthier to saute collard greens in a little bit of healthy oil w/ or without onions and garlic. You can also eat the green vegetable as part of salads or wraps if you like the taste of raw collard greens. * The key is in making cure to clean the leaves well (for any leaf veggie) regardless of eating them cooked or raw.

Collard Green Wrap Sandwich Recipe

The collard green wrap in this picture is around 224 calories (I may have calculated more calories than needed for the one collard leaf).

Ingredients:

1 serving whipped Cream Cheese = 60 calories
3 oz Rotisserie Turkey Breast = 110 calories (23g protein like emoticon )
1 raw collard green leaf (medium) = 30 calories
1/2 cup romaine lettuce (shredded) = 4 calories
1/2 tomato chopped = 20 calories
Salt / Pepper (optional - I did not use)

Instructions:

Clean your collard wrap and let it dry.

Break off the tail ofthe stem (where no leaf is on it).

Lay it flat (dark green side upwards) with the middle stem facing you vertically.

Spread one serving of cream cheese evenly in the middle of the collard wrap.

Break up the rotisserie turkey breast on top of the cream cheese.

Add the romaine lettuce next and the tomato on top.

Turn your plate so the middle collard green stem and food on it is now horizontal.

Start at the very end (towards you) and roll it up like you see in the picture above.

Cut it in half and serve.

As you can see,I took a bite before taking the picture. It was so good that I had to share :)

A little after my wrap, I had 4 large Brazil Nuts (112 calories) as a "dessert" (such a treat - YUM).
Other Collard Green Wrap Meal Ideas
Of course this is just a wrap idea, but you can use whatever is part of your meal plan and you like to eat. Some examples include:

1) Tuna Salad
2) Egg Salad
3) Raw or Grilled Veggies
4) Chicken Breast
5) Steak'Ems

Collard Green Wraps work well for fajitas or burritos, too, because their so sturdy (load it up and the filling won't fall out).

Give Collard Greens A Try ...
I hope this Collard Green Recipe / Meal Idea sounds delicious to you or at least interesting enough to give collard greens a try if you don't already eat them. If you do not care for them raw, please try the saute method or the boiling methods explained above. The taste is softened with prolonged cooking, so you can get some of the health benefits of this beneficial green veggie. Of course, keep in mind that nutrition is decreased a bit the longer it is cooked. Eating them raw will give you full vitamins and benefits; especially for your digestion as a healthy food.

2 Ways To Stop Overeating At Restaurants | Eat Out & Lose Weight

How to stop overeating at restaurants. Eat Out and still lose weight with Skinny Fiber.

Eating at restaurants can sabotage your weight loss goals. This is because most restaurants serve larger portions of GMO addictive foods that are heavy in calories, carbs, sugar and fats. It is their job to cook delicious foods that keep us wanting to come back for more! Which makes it hard to not overeat at restaurants. Yet, way too easy to get completely off track with weight loss goals and this yo yo pattern can last for weeks, months or years.

So, why am I sending you tips on how to eat out at restaurants?

I am NOT encouraging you to eat out! It is just that sometimes we have to eat at restaurants for special occasions, convenience, travel or business. Yes, I could go through a bunch of suggestions like "don't eat out at all", "only eat at the health food restaurant", "just order a salad", "only drink water", etc., but the reality is that learning how to make healthy choices is better in the long run. This is why I am sharing these 2 tips with you. Hopefully, they will ease the stress of making better food choices and help you to stop overeating at restaurants while trying to lose weight!

So, please read on:

The 6 Ps of Life (and Weight Loss) - Tip #1

My Grandfather was a career serviceman, mentor and business professional. People from all over the United States respected the person that he was as well as his accomplishments. If you asked him what was his "secret to success", he would attribute everything to God, his parents, the 6 Ps of Life and my Grandmother :) My Grandfather was notorious for preaching these 6 Ps to all of us:

6 Ps = Prior Planning Prevents Piss Poor Performance

PRIOR PLANNING being point here. It's so much better to be prepared when trying to lose weight, then to accidentally go to a restaurant and eat too much food or the wrong kinds of foods for your diet plan. The same is true when meal planning at home and work, too.

Eating at restaurants is a major cause for weight gain and obesity throughout the world. 

This is because the calories add up to be far more than we could ever anticipate they would be when "blindly" making food choices. Most restaurants don't hold back on the amount of sugar, salt, fats and chemicals. So, planning ahead will help make dining out less damaging to your weight loss goals and health.

Try doing the following instead of just "winging it" all of the time:
  • Discuss ahead of time where you're going to eat!
  • Check the restaurant's website to look up nutrition facts before you dine out.
  • Determine what you will eat and drink while you are out, and STICK TO IT!!!
It's as simple as that!!! 

Additionally, this process will eventually work EVEN if you do not know which restaurant you're going to because you will start recognizing the nutritional information for standard types of foods, salad dressings, drinks, side dishes and foods cooked at restaurants.

Choose low carb and healthy food when eating out at restaurants. Make sure to take your Skinny Fiber 30 minutes before meals!

How To Find Nutritional Information On The Websites

1) Type in the restaurant's website address or Google for it.

2) Go to the menu page and click on the picture for the food you are interested in.
Usually, when you click on the picture of the food, there is a NUTRITION link for that food item, but sometimes it's in their menu list on the side of the page. 
Click on it and look at how many calories as well as how much sugar, fat, carbohydrates are in the food you want to eat. Base your choices on the parameters of your diet plan. 
Of course, keep in mind that taking Skinny Fiber at least 30 minutes before your meal will help with overeating (time it to take in the car before arriving if need be!), but you still want to check out the nutritional guides to make sure you're making healthy choices.
3) If you don't see a Nutrition link on the menu pages, look at the bottom of the Home page.
Restaurants often have one Nutritional Information guide with everything they service on one massive list. It is usually at the bottom of the home page of their website. If not, look around and you might find it.
4) If you cannot find a Nutritional Information guide then you can Google THE RESTAURANT'S NAME + NUTRITIONAL INFORMATION and find it in the Google search results.

FOR EXAMPLE (Restaurants Picked At Random):

Applebee's has a link at the bottom of their webpage:
http://www.applebees.com/

Bob Evans does not have a nutritional information link, but when you click on the food on their menu, each listing has a NUTRITION link:
https://www.bobevans.com/our-restaurants/menu

Romano's Macaroni Grill has theirs on their menu:
http://www.macaronigrill.com/menus

Some restaurants don't have this info at all

Some Restaurants Do Not List Nutritional Information

If you can not find any nutritional information for where you want to eat, you can choose to go to another restaurant . If you cannot change plans, then you can Google basic nutritional information about popular menu items and try to determine which would be best to eat.

For example,

It is not easy to find any nutritional information on the Cody's Original Roadhouse website - http://codysoriginalroadhouse.com, so when I Google the phrase:

CODY'S ORIGINAL ROADHOUSE NUTRITIONAL INFORMATION

Check restaurant websites for nutritional information before going out to eat! This can help stop overeating.

I can see other 3rd party websites where people have shared the nutritional information for that restaurant and refer to these for some guidance. The more popular the restaurant, the more 3rd party reviews and websites to refer to, so keep this in mind when choosing a restaurant.

Another solution is to simply look at the menu on their website, call ahead and ask - OR - deal with asking certain questions about what ingredients are in their food (i.e. sugar, oils, gluten, etc.) while you are at the restaurant or take the safe route by choosing basics that you know are ok for your body.

For example, salad without croutons (or cheese if you're non dairy) w/ olive oil & vinegar,  veggies and meat. That is one of my basic meal choices if I can't find nutritional information before going or we happen to choose a restaurant out of the blue (which is not often for our family).
